Have you ever tried briyani that is cooked inside bamboo tubes? There is a small restaurant in Klang that specializes in this unique cooking method. They offer different spice pastes for chicken, mutton, and crab, making their briyani stand out from the rest.
To start, Stellamary puts a piece of banana leaf inside the bamboo tubes. Then, she adds a layer of high quality Pusa 1121 Basmati Biryani rice. After that, she adds the meats/fish. Another layer of biryani is added and the tube is sealed with a banana leaf to prevent steam from getting in and spoiling everything. Brilliant!
Keep in mind that the meat is mostly cooked, around 80%, before being placed in the tube. The tubes are then packed and steamed in large aluminum pots similar to those used in traditional gatherings, outside of the shop.
The biryani dishes have a strong Indian influence with bold spices that really awaken your taste buds. Our favorite is the chicken biryani, which even comes with an egg. The mutton biryani has even more flavor and spice. It pairs well with the vegetable yogurt and okra. For an extra kick, be sure to pour in the curries!
